INGREDIENTS:

3 tomatoes

75 grams mozzarella cheese

30 grams bacon
-
1 eggplant
-
3 tbsp panko bread crumbs

3 tsp olive oil
-
dried basil
-
6 tbsp basil sauce
-
salt
-
black pepper
LET'S GET COOKING...

Preheat oven to 180 degrees C.

Cut off 1/5 off the tops of tomatoes.

Scoop out the insides with a spoon.

Chop insides of tomatoes, mozzarella, bacon and eggplant into 1 cm blocks.

Fill tomato cups with mixture.

Combine panko, olive oil and dried basil and put on top of tomato cups. Season with salt and pepper. Drizzle with more olive oil and bake for 15-20 minutes at 180 degrees C.

Serve the baked tomatoes with basil sauce.
