How to make Baked Caprese

INGREDIENTS:

  • 3 tomatoes

  • 75 grams mozzarella cheese

  • 30 grams bacon

  • 1 eggplant

  • 3 tbsp panko bread crumbs

  • 3 tsp olive oil

  • dried basil

  • 6 tbsp basil sauce

  • salt

  • black pepper

LET'S GET COOKING...

  • Preheat oven to 180 degrees C.

  • Cut off 1/5 off the tops of tomatoes.

  • Scoop out the insides with a spoon.

  • Chop insides of tomatoes, mozzarella, bacon and eggplant into 1 cm blocks.

  • Fill tomato cups with mixture.

  • Combine panko, olive oil and dried basil and put on top of tomato cups. Season with salt and pepper. Drizzle with more olive oil and bake for 15-20 minutes at 180 degrees C.

  • Serve the baked tomatoes with basil sauce.
