Omusubi (Onigiri) fillings that are easy and use American ingredients?

Does anyone have recipes for omusubi fillings that are easy to make, freeze well, and use foods found in American supermarkets? I have been looking specifically for the Miso beef with Caramelized onions and the spicy miso eggplant fillings like I had at Sunny Blue in Santa Monica if anyone knows the recipes for those... But open to all suggestions (except canned tuna.. Bleh)!
