Peanut, Date, and Chocolate Energy Bars- only 4 ingredients

Total time: 20 minutes (plus refrigeration a few hours or overnight)

Ingredients:

  • 1 1/2 cups unsalted peanuts

  • 1 1/2 cups dates, pitted and dried

  • 1/4 teaspoon salt

  • 1 cup dark chocolate (chopped or in chip form), divided into 1/2 + 1/2 cup

Directions:

  • Prepare pan: Line an 8″ x 8″ baking pan with parchment paper.

  • Pulse bar ingredients: In a food processor pulse together the peanuts, dates and salt. After 5-6 pulses remove cover and mix up any stuck pieces then proceed to pulse for 1-2 minutes, until it resembles couscous. It should be able to stick together when pressed but will look crumbly. Add 1/2 cup of the chocolate and pulse a few times to incorporate.
