A great rainbow trout, especially wild caught, is a thing of beauty. Here's a way to serve it with only just a little apple slices done in brown butter.
Ingredients

4 large rainbow trout fillets

1 large Granny Smith apple, cut into slices

A stick of butter (roughly 1/4 pound) or maybe a little more, if you like

2 thyme sticks

Salt and pepper
Directions
Salt and pepper the trout fillets, and let them sit.
Make the brown butter using a stick or maybe a bit more butter. This allows the the butter to melt, gets the water out of the butter by heating, then lightly to darkly browns the milk fat in the butter.
The sliced apples go into the butter until they are just tender, and are removed but kept warm.
The trout fillets and thyme go into the brown butter, trout face down at first and then top side up. Watch them carefully, because they can be ruined in a heartbeat.
Lay the finished fillet on a plate, top with apples and add just a little of the brown butter on top.
