So between some confusion at the grocery store and an unexpected gift of vegetables from a family member, I have a bunch of veggies I want to use up before they go bad. I'm hoping to do something that isn't just roasted vegetables or soup stock. I currently have:
*4 bunches of scallions (The real thing I'm worried about using up),White Potatoes, Sweet Potatoes, Carrots, Radishes, Kale, Spinach, Mushrooms, Cauliflower Rice, Celery, and A little bit of leftover fennel
