So, overall, I really enjoy this recipe for Chicken Asparagus Roll-Ups. However, I really don't like the mayonnaise base. I can't put my finger on it, but it adds a texture/taste/aftertaste/SOMETHING that I really don't enjoy. Could anyone suggest a replacement that would go well with the other ingredients? Essentially, all of the listed ingredients are mixed together and placed on the chicken.
Ingredients:
1/2 cup mayonnaise
3 tablespoons Dijon mustard
1 lemon, juiced and zested
2 teaspoons dried tarragon
1 teaspoon ground black pepper
1/2 teaspoon salt
16 spears fresh asparagus, trimmed
4 skinless, boneless chicken breast halves
4 slices provolone cheese
1 cup panko bread crumbs
