Long story short, my University raised the cost of a meal plan by 1.6k-- way more than I can afford. I dropped the meal plan, and am now living in a dorm that has a kitchen, albeit shared among 50-60 students.
Kitchen is crowded 24/7, and it seems rude to hog the stove for more than an hour.
Also, I'm super scrunched on time, and probably will only be able to cook 3-4 times a week, for 1 hr tops. Right now, I cook a lot of stir-fry vegetables in large batches, and hard boil a lot of eggs. Hot pockets and granola bars have also become my best friend :').
Does anyone have any vegetarian recipes to help a broke, stressed out college girl?
Would prefer quick, easy, minimal ingredient recipes. Thanks in advance for your help :)
