Quinoa Tabbouleh

Mmmm. So refreshing, easy, and cheap. Plus it's impressive, so make it for yo mama

look how tasty

All you need is:

•quinoa •cucumber •tomato •onion •parsley •lemon

Ok so COOK the quinoa

(Directions are always on the bag, which usually suggests using a cup of quinoa, which ends up as a fuckton more when cooked. I keep all the cooked quinoa in a separate bowl to use for various recipes. It saves well and that way you don't end up with 6 meals worth of the same recipe, if you're cooking for one)

While that's being done, CHOP CHOP the cucumber, tomato, and onion

(I like to dice my onion pieces real small, use cherry tomatoes and cut like 5 of those pretty small for a little tomato in every bite, and I like to keep the cucumber pieces slightly bigger so you can still get that crunch)

After quinoa is cooked, put it in a bowl and:

SQUEEEEZE some lemon wedges on it SNIP SNIP some parsley in there aaaand MIX in all your chopped goodies

Since this isn't baking I didn't put a lot of super strict rules on this. Make it how you wanna! You like cucumbers and tomatoes but aren't a fan of onion breath? LOAD THAT BABY UP WITH THE FRUITS, SKIP THE VEG! Get to it hungry people.
