Ingredients:
- 4 Chicken breasts,
- 4 Potatoes (large),
- 2 Peppers,
- 1 Onion,
- 1 tin Chopped tomatoes,
- 12 Olives (optional),
- 2 tbsp Olive oil,
- 1 Chicken stock cube,
- Salt and Pepper,
- Basil,
- Paprika,
- 2 Carrots
Method:
- Preheat the oven to 180 degrees
- Chop the carrots and potatoes into big chunks and put in the pan to boil for 15 minutes (until soft).
- Cut the chicken breasts into quarters and chop the onion and peppers into large chunks.
- Once the carrots and potatoes have boiled, drain the pan and add everything to the roasting tray. (Optional: this is where you would add the olives too)
- Drain the liquid from the chopped tomatoes and add the rest in too.
- Pour over the oil and mix in.
- Add the stock cube, salt and pepper to half a mug of boiling water and once mixed in pour this into the tray too.
- Sprinkle over the basil and paprika.
- Put the tray in the oven and cook for 50 minutes.
Note:
