I'll start with her dietary restrictions. She has had a lung transplant, so he is unable to eat any meat that hasn't been cooked all the way through (kills most beef and lamb recipes), any soft cheeses, any deli meats, or any sort of sprouts. She is also in the early stages of pregnancy, and is a type 1 diabetic. This means she is really watching her carbs, so pasta and rice dishes are out. She doesn't like any fish or shellfish either. Another restriction, is that it is summer and hot as hell here in Australia, so the Oven is to be used sparingly.
Currently planned for the week is a beef stir-fry (not sure what to use in place of rice), pork schnitzel with veggies, apricot chicken, and I dunno, maybe lamb korma. I feel like I'm going to be cooking the same things over and over, and I would love some ideas on how I can change up the nightly dinner.
