Im looking for a very corse/chunky Hmong or South East Asian sausage recipe to make at home. I didn’t get to go to Hmong New Years in Fresno this past week and would like to at least create the experience at home. I’m up for any recipe that has a good bit of texture where there are chunks of lean and fat and the meat isn’t all the way grounded. Anything is appreciated. I’ve gotten down the flavors that are pungent in it with garlic, chilis, ginger and lemongrass but wonder if I’m forgetting something else.
