Suggestions for using coconut flour for fried chicken nuggets

I'm dreaming up a new recipe that involves coconut flour and shredded coconut for the batter. I'm using peanut oil for frying and small chunks of skinless chicken thighs in a cast iron skillet. It's a method I've used before so I know the basics. Any suggestions for spices/seasonings, sides, cooking tips, etc.
