Greek French Fries or Tots

  • 1 bag of frozen tots or french fries
  • Spice mix (see below)
  • Feta cheese, crumbled

Directions

  • Preheat oven according to package directions.

  • Tin foil a baking sheet and spread out the tots/fries in a single layer.

  • Drizzle with olive oil and run your hands over them to get all sides of the tots/fries lightly coated, but you don't have to be too fussy about it.

  • Sprinkle with spice mix and bake according to package directions.

  • Put crumbled feta in a bowl with a serving spoon and let people sprinkle on top of tots/fries at will. Done.

Note: It's cheaper to buy a block of feta and chop it in a food processor. It only takes a few seconds and comes out great.

Spice Mix

2 teaspoons of:

  • salt

  • granulated garlic powder

  • dried basil

  • dried oregano

1 teaspoon of:

  • ground cinnamon

  • coarsely ground black pepper

  • dried parsley

  • dried rosemary, minced

  • dried marjoram

1/2 teaspoon of:

  • ground thyme

  • ground nutmeg

Mix spices well in a bowl. Place in jar with lid or in a zippy bag. You will have a LOT left over even after this recipe.

Other ideas to use spice mix for:

  • Grilled chicken breasts
  • Put a few pinches of this on a plate, add some olive oil, and swirl to mix together. Use as a dip or spread for some homemade crusty sourdough bread
  • Greek-Seasoned T-Bone Steaks with Cucumber and Tomato Salad
  • Pork tenderloin. Coat it with spice mix, sear on high heat with oil, and then roast it until done.
  • Greek Pulled Pork
  • Use in meatloaf
  • Marinate pre-sliced "sirloin steak for stir fry" at room temp for 1 hour before a quick stir fry. served with tzatziki.
  • Use in rice pilaf recipe
  • ground beef/lamb kebabs
  • great on roasted chicken thighs/drumsticks!
  • Use on Steakums as a quick fix for gyro meat
