Question time! I'm trying to make mayonnaise. My brother made his in more minutes with his fancy immersion blender, and I'm jealous, okay?
I'm using a regular (ish) blender, a nutribullet. I've tried all kinds of recipes. Egg yolks only. Whole eggs. One egg, two egg. 1/2 cup oil, 1 cup. Adding spices at the beginning, adding at the end. I've tried a lot.
Usually I blend the eggs for a bit with lemon juice to help emulsify, then add in the oil slowly. Since there is no spot to add the oil while it's blending in my nutribullet, I stop the blending, add the oil small bits st a time, and continue. Sometimes as small as a tablespoon.
Every time I end up with a frothy liquid mess.
What can I do to fix this? I'm prepared to hear my blender is messing it up.
