Peach Apricot Spicy Wings

Not overly sweet despite the jam.

Peach Apricot Spicy Wings

3 cloves of minced garlic - or use the equivalent from a squeeze tube

2 tablespoons minced ginger - or use the equivalent from a squeeze tube

1/3 cup each peach and apricot jam or preserves

1/3 cup tamari sauce

1/2 teaspoon hot sauce of choice - to taste

1 teaspoon oil

Optional half teaspoon of red pepper flakes because pretty

4 pounds chicken wings - whole or drumettes and harps

Mix the ingredients together and throw in the wings.

Toss to coat and then put in the fridge for at least three hours or overnight, tossing occasionally to make sure that every wing gets coated.

Arrange on a broiler pan or grill and cook for 20-25 minutes - turning and basting with the sauce until done.

Note: I set aside and reduced the marinade until it was more of a glaze before starting the grill and brushing it on the wings. I loved the taste so much that I made a second batch of the marinade and cooked it down to a sauce for dipping.

bon appetit
