What can i do with 1 pound of deshelled mussels?

i just got them as a gift, and my father loves them,i want to make him something tasty... does anybody knows any recipe for them other than paella or pasta? also how can i make sure they dont end up like rubber hard and chewy?

i have a cast iron pan so i can do recipes that start on the stove and end on the oven
