So I've been trying to replicate KFC's recipe at home, their are plenty of different versions on the internet so I'd like some help.
- Buttermilk seems to be the obvious choice when marinating the chicken, but some recipes ask for just Buttermilk with egg and others add the 11 herbs and spices with it. Should I or will that be over kill.
- Right now my recipe has 2tsp Salt, 1/2tsp thyme, 1 1/2tsp Basil, 1tsp Oregano, Black Pepper and Dried Mustard, 4tsp of Paprika, 1tsp of Garlic Salt and Ground Ginger and 3tsp of White pepper with 2 cups of Flour
- Should I replace the flour with Cornflour (Cornstarch)
- I hear MSG should be used as well, is that something to add to the breading or afterwards and if its the former, how much?
- I've heard I should put it in the frier, take it out for 30 minutes and then fry again to get that real crunchy texture
