Turkey Loaf

Ingredients

  • 2-2.5 Pounds Turkey Breast + Skin from entire Turkey Breast
  • 1/2 Cup Panko
  • 1 Tea. Sage & Wild Mushroom Oil
  • 1/2 Cup Vegetable Flakes ( sift excess parsley if present )
  • 1 Tea. Herbs de Provence
  • 1 Tbsp. Minced Garlic
  • 1 Tea. Ground Pepper
  • 1 Tea. Sea Salt
  • 3 Eggs
  • 1/2 Cup Chicken or Turkey Broth
  • 10 Ounces Condensed Cream of Mushroom Soup
  • 1 Tea. Liquid Smoke

Preparation

  1. Heat oven to 400F.

  2. Remove skin from entire Turkey Breast.

  3. Remove half of the meat from the bone.

  4. Lightly brown skin in a heavy pot without oil.

  5. Grind together meat and skin.

  6. Add all ingredients except for panko, mix completely.

  7. Add half of panko, mix completely let sit 5 minutes.

  8. Add remaining panko a small amount at a time until mixture is slightly damp. More panko may be added if required. If too dry add broth one tablespoon at a time until correct consistency is achieved.

  9. Place mixture into a baking dish and level by tapping on counter until even.

  10. Place dish in oven. After 5 minutes reduce heat to 375F.

Dish is completed when internal temperature of 155F is achieved, 30-40 minutes. .....
