Americans, what are some of your favorite copycat recipes?
For my friend's 18th he's planning an American style thing, and I'm in charge of food. Only issue is I've never visited America. We want fast food and diner style things, with ingredients that can be obtained relatively easily in the UK. Cheers!

Good add-ins for my baked mac and cheese?
I like my recipe, but it doesn't go far enough. I like leftovers, I like cooking enough to feed my family (me, my husband, and a picky toddler) for two dinners. Unfortunately my mac and cheese recipe falls just short of that, so I'm looking for advice on what I can add to plump it up a bit and make it even tastier. Proteins, veggies, whatever is good.
Current recipe:
8oz macaroni noodles
4tbs butter
4tbs flour
1c milk
1c heavy whipping cream
1/2 tsp salt
1/2 tsp pepper
1tsp dried mustard
8oz block sharp Cheddar, shredded
2tbs breadcrumbs
2tbs grated parmesan cheese
Cook and drain macaroni. Melt butter in large saucepan, then add flour, salt, pepper, whisk until well blended. Add milk and cream, stirring constantly. Bring to a boil, boil 2 mins, stirring constantly. Reduce heat and cook 10mins, stirring constantly. Add ground mustard. Gradually add cheese, simmer another 5 mins or until cheese is melted. Toss in macaroni to coat, put in buttered baking dish. Combine bread crumbs and parmesan cheese, sprinkle on top. Bake for 20mins at 400 or until top golden brown.
I also am unsure if I really need to cook the butter/flour mixture for 10 mins, as it feels like a long time and I don't see that sort of duration in any other recipe I've looked at online.
Any ideas? The mustard and parmesan are fairly new additions, so this recipe is open to tweaking. It's pretty good as is, but again, I'd like it to be... more.

Spicy Tuna Dishes
Ingredients:
Optional eel sauce(
1/4 cup mirin
1/4 cup soy sauce
1/4 cup sugar
)
Optional: buy yumyum/shrimp sauce at the store
1 tbsp Sriracha
1/2 tbsp Gochujang
Tuna
1/2 Avocado
1/8 cup Panko
1 tbsp chili oil
1/4 cup seasoned rice vinegar
Botan calrose rice
The rice:
Make according tonthe Botan instructions, after cooking fold in the rice vinegar
The Eel sauce:
Combine the soy sauce, mirin, and sugar over med-high heat, stir until the sugar dissolves, then simmer over low heat for 10 minutes. Remove from heat and stir while it cools (if you dont then you get this white foam that appears, it doesnt change taste, but it doesnt look nice)
The panko:
Heat chili oil in a small pan over high heat until it has a water consistency then reduce to medium, add panko and mix so all the oil is absorbed. Toast for 3 minutes.
The tuna:
Cut into 1/4 inch cubes, toss in gochujang and sriracha (adjust to taste).
If making a poke bowl:
Cut avocado into 1/4 inch cubes, spoon a cup of rice into a bowl, add your avocado, tuna, sprinkle with panko, drizzle with sauce and enjoy!
If making volcano:
Get a large funnel, pack the top third with tuna, after the tuna place two or 3 layers of thinly sliced avocado, after the avocado pack the panko, and finally after the panko, pack the best with rice.
To flip out: put a plate over the base, flip it over, and gently blow into the top of the funnel to loosen. If you dont want to blow into it for sanitary reason or whatever, get a gallon bag and seal it over the top and push the air out.
I imagine oiling the funnel or lining it with plastic/paper would also work.

Need help converting stubborn parents!
I recently moved in with my parents for one month (in between school and moving to a new state for a job). Growing up my parents would cook pretty much the same week: oven baked unseasoned (usually overcooked) piece of meat, with a bunch of steamed or boiled veggies, and some type of starch (potato, rice, corn, etc.). They continue to cook like this every day, every week. I grew up thinking that chicken was supposed to hurt your jaw from the chewing, and I thought I hated pork. Turns out my parents just aren’t good cooks.
Every now and then, yeah, it’s not bad. But in general, I hate their cooking. It’s bland and boring. Now that I’ve moved in, I’ve volunteered to “chip in” by cooking the food, cleaning the kitchen, etc. They were great with that, until I told them the types of things I wanted to cook (baked ziti, Salisbury steak, pork agrodolce with roasted veggies, etc.). They say they don’t want any change, and what I’m choosing is “too fancy”. They won’t compromise with me. I don’t know what to do anymore!!! Anyone have any suggestions???

Sauce and Marinade for Chicken and Rice
Hi,
I'm stumped. What's a good marinade and sauce I can make with chicken and rice. I have light and dark soy, oyster sauce, garlic, onion, chicken stock, honey and peanut, sesame, vegetable oil and plain flour.

Help with an Italian stuffing recipe
Hi everyone, My late grandmother used to make stuffing every thanksgiving. All I remember is she would get Italian bread/roll, let it stay out to get stale and soak it in water. That’s all I know, I remember there was nothing “bready” about the stuffing, it didn’t look like cubes of bread or anything I mean, like you couldn’t find an “end” or “too” of a piece of bread.
Can anyone help with some pointers, I’m guessing she put some grated Parmesan cheese in it and sometimes would add bacon.

6 strips of 1/2 inch pork belly...what do I do?!
I have six 1/2 inch (approx.) strips of pork belly that I have no idea what to do with. On a recent trip to Australia my boyfriend and I shared a piece of pork belly we bought already cooked from the grocery store. It was shockingly life changing and he hasn’t been able to stop mentioning it. Since then I’ve kept my eyes peeled for pork belly in the stores and found some but now feel intimidated trying to cook it.
What are some of your must-try ways to prepare or cook these delicious slices of pork? Cooking tools available to me: oven, BBQ, slow cooker, Instant pot.

I need help please

What is this Thai dish called?
Hi everyone! Sorry if this is the wrong place to post this, I am looking for the name or recipe for a specific Thai dish that’s made with zucchini and scrambled eggs. I used to work at a pretty authentic Thai restaurant, so the family meal was always super authentic (the FOH guys from Bangkok would describe the food as “rustic”, which I’m pretty sure means from the northern and kinda rural areas) and this was my absolute favorite dish of all the amazing stuff they’d make us. I asked the line cook who made it a few times what it was and how to make it but he would always just answer “it’s zucchini and eggs”.
Maybe he just had some sort of magic touch, but I haven’t been able to ever recreate how delicious this was and I’d love to find the name of the dish if there is one- it could just be something he liked to make and not an actual staple in Thai cuisine.
The zucchini was sliced into rounds, and mixed in with the eggs. There was definitely soy sauce in there, and I’m pretty sure some onion. It was salty and savory and I can’t stress this enough, so tasty. If this question does get answered, I really suggest everyone reading this who likes good food tries it.
