Recipe Request for good crunchy on the outside, chewy and fluffy on the inside dough based donut (not cake batter based). Also requesting for nice elephant ears (deep fried flat dough) recipe that's also crunchy on the outside yet also chewy.

I already looked at Bon Appetit's Brad and Claire makes donut series and not sure if I want a brioche based donut. However, I'm completely new to donut making, so if brioche based donuts are the best, then I'm game.

I do bake sourdough breads and pizzas, so I'm open to using either a starter or yeast.

I'd appreciate some recipes some of you may have tried out and really enjoy and depend on for donuts and also for state fair type of elephant ears.

Again, I did look and allrecipe has one out there that many people seem to like, but was wondering if there are others I should consider.
