GRANOLA
Makes 4 cups
3 Cups thick-cut rolled oats
3 Tablespoons brown sugar
1 Teaspoon cinnamon
¼ Teaspoon salt
⅓ Cup honey
¼ Cup vegetable oil
1 Teaspoon vanilla
½ Cup sun-dried fruit of choice (raisins, currants, cherries, apricots etc.)
½ Cup toasted, chopped nuts of choice (almonds, walnuts, pecans etc.)
Preheat oven to 300oF. Combine the oats, sugar, cinnamon, salt, honey, vegetable oil, and vanilla in a bowl. Mix well with a spoon or spatula. Spread over a well-oiled baking sheet. Bake the mixture for 15 minutes. Stir once for even browning. Bake for 10 minutes more and remove from oven. Stir again and allow to cool to room temperature before adding fruits and nuts of your choice.
