Help! Looking for those out of the ordinary recipes that truly stood above the rest

My bf and I are celebrating Christmas this weekend (our work schedules are awful) and I'd love to make him something truly special.

I'm looking for recipes that are "I haven't stopped thinking about this for a week" delicious. Time constraints and cost are not factors. I love to cook and am comfortable with just about anything. However, I live in the midwest and have very little access to fresh seafood. Other than that, I'm open to anything!
