Potato Pizza

Potato Pizza Ingredients

  • 1-4 Russet Potatoes
  • Shredded Colby Jack Cheese (or any preferred cheese it just needs to be shredded)
  • Chives
  • Bacon Bits
  • Spreadable Butter
  • Salt
  • Pepper
  • Tony Chachere's Creole Seasoning
  • Whole Foods Everyday Blends Pepper and More

Potato Pizza Instructions

  1. Scrub your potatoes and stab them on each side with a fork or knife. I usually do 2-4 stabs on all 4 sides of each potato with a knife.
  2. Put each potato in its own ziplock bag and zip the bag to where it's mostly closed but there is still a small hole for the excess steam to escape.
  3. Start the microwave. I usually do 6-8 minutes for 1 large potato, 8-10 minutes for 2 larger potatoes, and 15-16 minutes for 4 smaller potatoes. I haven't tried it with 3 potatoes yet but I assume the cook time would be around 12-14 minutes.
  4. Chop up the chives while the potatoes cook.
  5. When the potatoes are done remove them from their bags and put them on their respective plates. You will know if they're done enough by trying to squish the sides together while it's still in the bag. Warning - they will be very hot so use a paper towel while squishing. If the potatoes are squishy they are done. Use 1 potato per plate if using larger potatoes or 2 potatoes per plate for smaller potatoes.
  6. Use a paper towel to dab up any excess water that leaks out from the potatoes onto the plate.
  7. Cut the potatoes down the middle lengthwise then again a few times in the opposite way to make smaller potato chunks.
  8. Scoop out the flesh of each chunk and put them on the plate next to the skins. Arrange them into a circle with little or no holes in between the skins and flesh.
  9. Put small chunks of the spreadable butter throughout the circle then add the spices.
  10. Sprinkle the cheese and bacon bits on top. I usually do cheese then bacon bits.
  11. Put the plate in the microwave until the cheese is fully melted. It usually takes 30 seconds to 1 minute and 30 seconds for the cheese to melt.
  12. Take out of the microwave, add another layer of the spices, then sprinkle the chives on top.

The food in the picture was made with 2 smaller russet potatoes. I only added one layer of the Tony Chachere's seasoning on top of the cheese. Tell me if you guys can think of anything that would make this better. You can add sour cream but I personally dislike it so it's not in this recipe. Obviously, the spices, toppings, and amount of toppings will vary depending on tastes.
