Sorry if this breaks some rules but it's a recipe passed down from my 81 year old Portuguese grandma who's measurements are basically... "some" of this, "lots" of that, and "maybe this too"
This is a generic crab cake recipe for reference about measurement sizes.
I'm posting so maybe people have a recipe to make use of leftover thanksgiving/ christmas dinner food. Once again, I do not have direct measurements and I'm sorry for being a terrible person.
Mix into a large bowl.
- 1. Shred up left over turkey or cut into cubes. (Depending on preference)
- 2. Add mashed potatoes and stuffing .
- 3. Add ingredients to compliment mixture. (Green onion, bacon, onion, parsley, salt, pepper) Basically whatever you enjoy.
- 4. Add in eggs. Seems to be 1 egg for a pound of mixture.
- 5. Get your hands dirty and really mix everything together.
- 6. Scoop into little balls like cookie dough and get ready to cook.
Depending on how you like your food you can either
- Broil for 15mins in oven.
- Pan sear in skillet/pan 5-6 mins per side.
- Fry in oil until golden brown.
If you're wondering what the mixture ratio should be, it's quite easy.
- Do you like Turkey more? Add more turkey than potato/ stuffing.
- Do you enjoy stuffing more? Add more stuffing
- Do you enjoy proper measurements in a recipe? 81 year old grandma doesn't care.
Use cranberry sauce as a dip if you enjoy. Thanks for reading and I hope I did ok.
