These shortbread cookies are absolutely delicious and are guaranteed to melt in your mouth. They are super simple to make and don’t require much time to prepare. Feel free to get creative with your toppings and add ins. For this recipe, I used chopped pecans and a piece of Toblerone chocolate for some extra sweetness. Enjoy!
What you’ll need: • 1 cup of unsalted butter, at room temperature • ½ cup + 2 tbsp of icing sugar • ¼ cup of cornstarch • 1 ½ cup of all-purpose flour • ½ tsp of salt • 1 tsp of vanilla extract • ¼ cup of chopped pecans • ½ of a Toblerone bar
What to do:

Preheat the oven to 350°F. Prepare a large non-stick baking tray (you may want to add a light layer of PAM cooking spray).

In a large mixing bowl, add 1 cup of unsalted butter (at room temperature) and beat with a fork until light and fluffy.

Slowly, one spoonful at a time, add the icing sugar to the softened butter and beat with a fork after each addition. Continue until all of the icing sugar has been added.

Slowly, one spoonful at a time, add the cornstarch to the butter and sugar mixture and beat with a fork after each addition. Continue until all of the cornstarch has been added

Add the vanilla extract to the bowl and mix.

In a separate bowl or measuring cup, mix the salt and all-purpose flour. Slowly, one spoonful at a time, add the flour and salt mixture to the large mixing bowl and beat with a fork after each addition. Continue doing this until all of the flour has been added.

Stir in the chopped pecans (or any other nuts/add ins you prefer).

Gather the dough into balls and flatten slightly so they are just about the size of your palm. Place the dough on the baking tray so that they are evenly spaced out (about 1-2 inches apart).

Take one piece of Toblerone chocolate and slightly press it into the top of the cookie dough.

Place the baking tray in the oven for 18-20 minutes. Keep an eye on them as you don’t want them to brown too much.

After 18-20 minutes, remove the cookies from the oven, and allow the cookies to cool (this step is essential! The cookies will be very soft and fragile when they are hot so they need a chance to harden). Once they have cooled, indulge! 😊
