So mom and I made caramel yesterday with a wet recipe, 7 oz sugar, 1/3 c water, 2 tbsp corn syrup and 1/4 tsp lemon juice. Pretty straight forward. It's hard as hell though. Can I just chuck some in water to dissolve it? I want a clear, liquid caramel and this seems like the easy way to go, but I can't seem to find anything to say if this a good or bad idea.
