Chicken and Pork with Vegetables in Tomato Garlic Curry Sauce

Ingredients

  • 1 lb chicken breast, cubed
  • 1 lb ground pork
  • 2 tablespoons vegetable oil
  • 1 onion, julienned
  • 1 green bell pepper, julienned
  • 1 yellow bell pepper, jullienned
  • 1 carrot, shredded
  • 1/3 cup sliced porcini mushrooms
  • 3 cloves garlic, chopped

Tomato Garlic Sauce

  • 1 cup tomato sauce
  • 1 tablespoon tomato paste
  • 3 cloves garlic, chopped
  • 1 tsp honey
  • 1 bay leaf
  • 1 tsp cumin
  • 1 tsp rice vinegar
  • 1 1/2 tsp curry powder
  • 1 tsp
  • salt and pepper
  • 1/2 inch of ginger root, chopped well

Cooking

  1. in a heavy frying pan or cast iron pan, cook the pork in half the oil for 4 minutes. remove and set aside. in the same pan, add in the chicken and cook for 5 minutes, remove and set aside. in a medium sized bowl, combine sauce ingredients.
  2. in a large frying pan (can use the same one for the pork and chicken) or a wok, add in the rest of the vegetable oil and saute the vegetables and garlic for 5 minutes, or until onions start to clear and peppers start to get soft. add in the sauce and stir for a minute. add in the pork and chicken and cook for another 5 minutes on high heat while stirring from time to time. remove from heat and garnish with more cilantro. serves well with rice or noodles.
