Ingredients
- 1 lb chicken breast, cubed
- 1 lb ground pork
- 2 tablespoons vegetable oil
- 1 onion, julienned
- 1 green bell pepper, julienned
- 1 yellow bell pepper, jullienned
- 1 carrot, shredded
- 1/3 cup sliced porcini mushrooms
- 3 cloves garlic, chopped
Tomato Garlic Sauce
- 1 cup tomato sauce
- 1 tablespoon tomato paste
- 3 cloves garlic, chopped
- 1 tsp honey
- 1 bay leaf
- 1 tsp cumin
- 1 tsp rice vinegar
- 1 1/2 tsp curry powder
- 1 tsp
- salt and pepper
- 1/2 inch of ginger root, chopped well
Cooking
- in a heavy frying pan or cast iron pan, cook the pork in half the oil for 4 minutes. remove and set aside. in the same pan, add in the chicken and cook for 5 minutes, remove and set aside. in a medium sized bowl, combine sauce ingredients.
- in a large frying pan (can use the same one for the pork and chicken) or a wok, add in the rest of the vegetable oil and saute the vegetables and garlic for 5 minutes, or until onions start to clear and peppers start to get soft. add in the sauce and stir for a minute. add in the pork and chicken and cook for another 5 minutes on high heat while stirring from time to time. remove from heat and garnish with more cilantro. serves well with rice or noodles.
