Healthy Breakfast Pie

  • Large thin pita bread - 1
  • Farmer cheese (cottage cheese) - 500 gm
  • Eggs - 4
  • Sugar - 4 tbsp
  • Semolina - 2 tbsp
  • Yogurt - 250 gm
  • Apricots, cherries, strawberries (your choice)

  • Combine farmer cheese with semolina, 2 tbsp of sugar and 2 eggs. Blend it a little bit for creamier consistency.

  • Take a large thin pita bread (Lavash) and grease it with cheese mixture. In order of chess board place fruits or berries that you chosen. After that roll a roll in a way to get it long, not thick.

  • Grease a round baking dish with a piece of butter and place your roll into it. Should be in a form of snail.

  • Mix 2 eggs with sugar until it gets a little bit fluffy and add yogurt into it. Mix all well and pour out on top of a snail.

  • Bake it for 40 minutes at 180C. Let it rest for at least 15 minutes after baking.

*Great option to bake it in the evening. And before serving in the morning heat it for a few seconds in a microwave. Serve with chocolate, caramel toping, you favorite jam or a spoon of yogurt.
