Ingredients for 2
- Cooked rice x 2 bowls
- Katsuobushi (called bonito flakes in English)
- Soy sauce x 1 tsp
- Mirin x 1 tsp (it's a Japanese condiment, like sake but with less alcohol and higher sugar content)
- Sugar x 1 tsp
- Sesame seeds x 1 tbsp
- Grated raw ginger x 1 small piece
- Miso x 1 tbsp for each person
- Spring onions (finely chopped) x 1~2 tbsp
- Tea (could be green tea, hojicha, genmai tea, bancha, etc.) x 1 rice bowl for each person
Instructions
- Mix soy sauce, mirin and sugar in a small pan.
- Bring the mixture to boil and then add a handful of katsuobushi as well as 1 table spoon of sesame seeds. Use chopsticks to mix everything. When it's well mixed you can remove the pan from the heat. Congratulations! You just made what's called okaka. It's widely known in Japan.
- Grate a piece of ginger and chop spring onions very fine.
- Put cooked rice in bowls and then put one table spoon of miso on top
- Add grated ginger, spring onions and Okaka on the side of miso.
- Prepare a pot of tea (this time I used Genmai tea) and pour it over the bowls. You can use different kinds of teas like green tea, Hojicha or Bancha.
