Lactose free pancakes

My SO just found out he's lactose intolerant, so we're having to learn some very different ways of cooking foods these days. Today I thought I'd try my hand at one of our favorites: pancakes. Much to our surprise, they were amazing, so I thought I'd share. They had a great flavor, and were light and fluffy.

1 cup all purpose flour

2 1/2 TBS sugar

1 tsp baking powder

1/4 tsp baking soda

1 tsp vinegar

1 beaten egg

1/2 cup unsweetened coconut cream

1/2 cup sweetened almond milk (I had to add just a bit more to get a good consistency in the batter).

2 TBS cooking oil

Sift together the flour, sugar, baking powder, and baking soda. Set aside.

Wisk together the coconut cream, almond milk, vinegar, egg, and oil. Add to the dry ingredients, and mix until well blended.

Cook on a lightly greased griddle. I'm a bacon lover, so I used bacon grease. You can use whatever you wish-butter, oil, non stick pan, etc.
