Some friends are having a party for eurovision, and I'd really like to make a simple vanilla cake, but I haven't been able to find any super simple recipes. I'm looking for a very simple recipe (prefereable in UK measurements), so that I can add whatever I'd like to it. It can't contain milk because their young daughter has an allergy, but apparently she's fine with rice milk.
Also, I'd just like some advice about filling. I'm not sure whether to go with buttercream and strawberry jam or vanilla frosting and strawberry jam. I feel the frosting would be too sweet, but the buttercream might not be as fluffy and smooth in texture as the frosting. Some experimenting may be in order.
