Pesto with only dried herbs

I know pesto can be a pretty loose term but I made a really classic tasting one using this technique. Because sometimes you want some pesto but don't feel like buying a bunch of fresh basil.

Base

  • 4-5 small cucumbers
  • 2 heavy pinches of dried herbs (basil for classic pesto)
  • 4-6 tablespoons of olive oil total

To Taste

  • 2 cloves of raw garlic
  • small handful of grated parmesan (the real stuff)
  • juice of 1 lemon
  • salt and pepper

The base is cucumber (this is for a little jar of pesto) actually diced and cooked on medium with some olive for 5-8 minutes until fragrant with a green bean smell. Add 2 good pinches of dried basil for the last minute and boom. The cooked cucumber provides body and a surprisingly strong but not overwhelming flavour for the dry herb. Let cool and blend with parmesan, garlic, lemon juice and olive oil + seasoning. I'd love to hear your thoughts and if you try it.
