These have an astounding yield, so don't worry if you're having a huge party. This will make somewhere around 72 individual triangles, or fill 1 pie crust.

Ingredients:
4 Oz. Melted butter 1 Large onion diced 1 Bunch fresh dill chopped fine 1 Bunch scallions chopped 1 Bag of cleaned and stemmed spinach 12 Oz. Feta cheese crumbled 4. Oz chopped garlic 1 Box Phyllo dough completely defrosted 2 Eggs 4. Oz. Grated Parmesan cheese Olive oil Salt and pepper to taste
Procedure:
- In a large sauce pan, heat about 2-3 Oz. Olive oil over medium heat.
- Add the onions and garlic and saute for 2-3 minutes.
- Add the spinach and cook it all the way down. About 3 minutes.
- Add the parmesans, dill, and scallions and incorporate. Remove from heat and allow to cool completely.
- In a separate bowl, Combine the Feta with the eggs.
- Combine the feta mixture with the cooled spinach mixture. Season lightly with salt and pepper.
- Place 1 sheet of dough on a dry clean surface and brush with melted butter lightly. Place another sheet on top and apply butter. Add one more sheet on top and repeat with butter. Do not soak the dough however.
- Cut the dough into long strips vertically. Depending on desired triangle size and width of dough, this number can vary.
- Place a small amount of mixture at the bottom of each strip and begin folding into triangle form. Please see video for this!
- On a lined baking sheet arrange the triangles evenly spaced apart. Brush with additional butter and bake at 350 degrees for 25 minutes.
- Allow the triangles to cool at least 10 minutes before serving.
