4 Ingredient Chickpea Salad

Ingredients:

  • 2 cans chickpeas (rinsed and divided)
  • 3 T Extra Virgin Olive Oil
  • 2 1/2 T Lemon Juice
  • 5 green onion stalks, diced
  • Salt and pepper to season (optional)

Instructions:

  • Take half of the chickpeas and lightly mash with olive oil. (You will want some shape retention)
  • Add other half chickpeas, lemon juice, and diced green onion.
  • Stir gently until well combined.
  • Season with salt and pepper if desired.
  • Refrigerate for at least 30 minutes to let flavors build.
  • Serve.
