Ingredients:
- 2 cans chickpeas (rinsed and divided)
- 3 T Extra Virgin Olive Oil
- 2 1/2 T Lemon Juice
- 5 green onion stalks, diced
- Salt and pepper to season (optional)
Instructions:
- Take half of the chickpeas and lightly mash with olive oil. (You will want some shape retention)
- Add other half chickpeas, lemon juice, and diced green onion.
- Stir gently until well combined.
- Season with salt and pepper if desired.
- Refrigerate for at least 30 minutes to let flavors build.
- Serve.
