Wonderful Braise: Stifado of Lamb

Stifado is one of many things you can find often in Greece. It's what I would call a braise, but using red wine and red vinegar.

Ingredients

  • 1 lb. small onions, peeled

  • 4 garlic cloves

  • 1/4 cup olive oil

  • 2 lbs boneless lamb

  • 1 can peeled tomatoes

  • 2 bay leaves

  • 1 cinnamon stick

  • 2 tsp. allspice

  • 4 whole cloves

  • 2 tsp. cumin

  • 1 cup red wine

  • 1 cup wine vinegar

Directions

Using the olive oil, brown the onions and garlic over low heat until just browned.

Add the lamb and brown for about 10-15 minutes over a bit higher heat.

Add the tomatoes, bay leaves, cinnamon stick, all spice, cloves and cumin and stir well. Then add the wine and wine vinegar.

Allow to cook at least 2 hours, adding a bit of water if necessary to keep it from being too thick.

Serve over orzo or rice.
