This is a soup that can be modified in many ways. The basics are the hamburger,
broth and tomatoes. You can use frozen or fresh vegetables. Substitute the
potatoes with rice, pearl barley or even a small pasta. Hunts makes a variety of
diced tomatoes with spices that go great with this recipe. This soup tastes even
better the next day.
Ingredients
- 1 lb lean (at least 80%) ground beef
- 1/4 cup chopped onion
- 2 cups diced peeled potatoes
- 1 cup sliced celery
- 1 bag (12 oz) frozen mixed vegetables
- 3 cups water
- 2 cans (10 1/2 oz) condensed beef broth
- 2 cups diced tomatoes, undrained (from 28-oz can)
- 1 tablespoon Worcestershire sauce
Directions

In 3-quart saucepan or Dutch oven, cook beef and onion over medium-high
heat, stirring frequently, until beef is thoroughly cooked; drain.

Add all remaining ingredients; mix well. Heat to boiling.
Reduce heat to low; cover and simmer 18 to 20 minutes, stirring occasionally,
until vegetables are tender.
