Lemon Curd Tart (Serves 8)

Ingredients: 150g Lemon Curd 45g Plain White Flour 110g Sugar 100g butter 10g Vanilla Essence Preparation method: 1. Mix the butter and sugar together. Once combined add the vanilla. 2. In a Medium bowl sift the flour and salt, then add them to the butter mixture until the dough comes together 3. Place the dough onto a surface dusted with flour and shape into a flat disc. 4. Press pastry into a 25cm round and chill until firm. 5. Pre-heat the oven to 180°C gas mark 4. 6. Butter one side of a square of foil to fit inside the chilled tart case and place it butter side down. 7.Bake for 20 minutes and Remove the foil 8.Prick the tart all over with a fork and pour lemon curd into the cart shell. 9.bake for 20-25 minutes more. 10. allow to cool at room temperature.
