Sweet Potato Klepon

INGREDIENTS

Dough:

  • 250 gr purple sweet potato

  • 100 gr glutinous rice flour

  • 1 tsp. salt

  • 1/2 tsp. powdered vanilla

  • 50 ml water

  • Filling:*

  • Brown sugar

Topping and coat:

  • Shredded coconut, steamed

  • Salt

LET'S GET COOKING...

  • Cut the sweet potatoes into small pieces, and steam until cooked and softened.

  • Crush the softened sweet potatoes to fine, and then mix glutinous rice flour in.

  • Knead until it is no longer sticky, cut, and make little dough balls.

  • Fill the dough balls with brown sugar.

  • Boil water, and put the sugar-filled dough balls in it.

  • Coat the dough balls with shredded coconut.

  • Serve.
