Bacon Wrapped Stuffed Chicken

Are you tired of a simple Chicken Kiev form of stuffing a chicken breast? Though to be fair, watching the garlic butter melt out of the chicken as you cut through it makes you realise why it is so good!! This dish provides a variation of ingredients to a stuffed chicken meal. Additionally bacon is used to wrap the chicken rather than breadcrumbs. The result is fantastic. The chicken is stuffed with a simple mixture of cheese, avocado and sour cream. Wrapped in bacon, it is then oven baked to produce a beautiful moist, juicy, tender chicken. The chicken is then finished off under the grill to crisp up the bacon and transform a simple chicken fillet into a special meal packed with flavour.

Ingredients:
• 4 large Chicken Fillets breast fillets
• 1/2 cup Shredded Cheese I use a 3 cheese combo mix
• 1/4 cup Sour Cream
• 1/4 tsp Garlic powder
• 1/2 tsp Pepper
• 1 Acocado diced
• 8 slices Bacon streaky bacon

Instructions:
1. Preheat a fan forced oven to 200°C
2. Line a baking tray with baking paper.
3. Cut a slit, lengthwise in each chicken breast to create a deep pocket. Be careful not to cut all the way through. Create as big a pocket as you can.
4. In a bowl, add avocado, cheese, sour cream, garlic powder and pepper. Stir to fully combine. You will need to mash the avocado as part of this process.
5. Spoon the avocado mixture into the pocket of each chicken breast. Use toothpick to help seal the pockets shut. Use the toothpicks after you have wrapped each chicken fillet with bacon
6. Wrap each chicken breast with 2 slices of bacon.
7. Place each chicken breast on the baking tray and place in oven to cook for about 30 minutes.
8. Remove from oven and place under a grill for about 5 minutes or until bacon is browned and crispy. Cooking time will vary depending on your grill. Keep watch during this process to avoid overcooking the bacon.
9. Remove from grill, garnish with additional avocado and serve.
