Meatballs are usually an easy dish to make and cook. You do need to get your hands a little messy, but the result with a homemade teriyaki sauce is really worthwhile. The pan fried beef meatballs are first cooked then coated and simmered in a homemade teriyaki sauce of garlic, soy sauce, water, ginger and brown sugar which is nicely thickened with corn flour. Serve as a main meal or appetiser. Either way you won’t be disappointed with these juicy tender meatballs. As a main meal, serve with your favourite vegetables or salad. Equally served with Jasmine rice is also a great option. There is not a large amount of sauce, but they still mix beautifully with Jasmine rice.
Ingredients:
Beef Meatballs
• 500 g Beef Mince
• 1/4 cup Breadcrumbs
• 1 Egg
• Salt to season
• Pepper to season
• 2 Spring Onions thinly sliced
• 1/2 tsp Ground Ginger
• 2 cloves Garlic crushed
• Vegetable Oil to cook meatballs
• Spring Onions to garnish
• Jasmine Rice optional to serve
Teriyaki Sauce
• 1 tbsp Vegetable Oil
• 1 clove Garlic crushed
• 1/4 cup Soy Sauce
• 3 tbsp water
• 1 tbsp Brown Sugar
• 1/2 tsp Ground Ginger
• 1 tsp Corn Flour
Instructions:
Beef Meatballs
1. In a large bowl add beef mince, breadcrumbs, egg, salt, pepper, onion, ginger and garlic.
2. Mix to combine all ingredients. This is best achieved by using your hands.
3. Divide mixture to roll and create approx 12 meatballs. Each meatball will be a little bigger than a golf ball size.
4. Heat oil in a large frying pan on medium high heat.
5. Once oil is hot, add meatballs to pan and cook until all sized are browned and meatballs are cooked through. About 8-9 minutes.
6. Remove meatballs from pan and add to saucepan with teriyaki sauce (refer teriyaki sauce instructions below).
7. Coat meatballs with sauce and simmer for approx 2 minutes.
8. Remove from heat, garnish with spring onions and serve. Serve with Jasmine rice or by itself.
Teriyaki Sauce
1. Heat oil in a medium saucepan over medium high heat.
2. Add garlic and cook for 30-60 seconds.
3. Add soy sauce, 2 tbsps water, brown sugar & ginger. Reduce heat and simmer for 2 minutes.
4. In a separate small bowl, add cornstarch and 1 tbsp water and stir to combine. Add to saucepan.
5. Cook sauce until thickened and continue to simmer until meatballs are cooked and ready to be added to the saucepan.
