I'm looking to recreate a shrimp and grits dish from a place called Boudreaux's Cajun Kitchen. I think I have it mostly worked out, other than the sauce/gravy the shrimp is served in.

The grits are formed and fried (obviously).
As for the sauce, I imagine it begins as a roux with some stock added. After that, I'm completely lost. And I really have no idea how to describe it other than "delicious" and "Cajun."
Typing "cajun gravy recipe" into google yields me nothing other than copycat popeye's chicken gravy recipes, and this is nothing like that.
So, I know it may be a long shot....but any ideas?
