Chocolate Mayonnaise Cake
Ingredients
3 cs flour 1/3 c cocoa 1 1/2 cs sugar 2 1/4 tsp baking powder 1 1/2 tsp baking soda 1 1/2 c mayonnaise 1 1/2 c water 1 1/2 tsp vanilla
Directions
Grease 2 9x9 inch cake pans. Sift all dry ingredients together in a large bowl. (instead of sifting I just used a mixer on slow speed to mix and break up any lumps)
Stir in mayonnaise. Slowly stir in water and vanilla till smooth and blended. Pour into cake pans.
Bake at 350 F for about 30 minutes or when cake springs back when touched. Cool. Remove from pans. Makes 2 layers for cake.
You'll notice there are no eggs and no oil in this cake recipe. The mayonnaise takes the place of them. In addition the mayonnaise will keep the cake moist for far longer than regular cake mix type cakes.
