Ingredients:
-
1 9" pie crust (I get mine frozen; if frozen, begin to thaw)
-
2-3 TBSP ea 3-4 cheeses (I prefer gouda, asiago, parmesan, mozzarella)
-
1/3 c frozen, chipped broccoli florets
-
1/3 c cooked, 0.5" diced sausage (I use turkey sausage to make it lighter, lol)
-
1/3 c frozen, chipped spinach
-
6 large eggs
-
1/4 c half & half
Process:
- 1 TBSP mixed Italian seasonings
-
Bake forked pie crust at 325°F for 10 minutes, add saltiest [probably gouda] cheese, bake until fully melted (about 5 more minutes)
-
Add broccoli, sausage, and spinach; add 2nd and/ or 3rd cheese; whisk eggs, half & half, and seasonings together in pint-sized pouring/measuring glass; gently pour over filling; sprinkle remaining cheese on top
-
Bake at 325°F for at least 40 minutes, until fully set. You can briefly broil for a couple minutes after this point to make it look more presentable, but don't over do it.
-
Remove from heat, and let sit for 5-10 minutes and slice into 1/8s.

I don't know the nutrition content, but it can't be that bad, right? Maybe so, I've had a few mimosas. Enjoy!
