NON-VEG
Ingredients
3 lbs Chicken, diced
2 Large Onions, diced
3 Cloves garlic, minced
1 in Ginger, minced
1 can Coconut Milk
2 Tb White Vinegar
2 tsp lemon juice
2 Tb Tamarind Concentrate
Ghee
Spices
4 tsp cumin powder
4 tsp ground mustard
4 tsp salt
3 tsp cayenne pepper powder
2 tsp ground cinnamon
2 tsp ground turmeric
2 tsp paprika
1 tsp brown sugar
1 tsp ground cloves
Directions
MIX spices in bowl & ADD chicken
BROWN in ghee then REMOVE
ADD onions to pan & saute THEN add garlic, ginger
ADD chicken back to pan WITH milk, sugar, vinegar, juice, & concentrate
COVER & SIMMER while making RICE or CHAPATI
CHICKEN TIKKA MASALA
NON-VEG
Ingredients
3 lbs Chicken, diced
2 onions, diced
4 cloves garlic, minced
1 in. ginger, minced
1 can tomato paste
1 can stewed tomatoes
1 can coconut milk
ghee
Spices
4 tsp salt
4 tsp Garam Masala
4 tsp ground cumin
2 tsp turmeric
2 tsp ground coriander
2 tsp paprika
1 tsp black pepper
½ tsp cayenne pepper powder
¼ tsp ground green cardamom
Red pepper flakes, to taste
Directions
MIX spices EXCPET for RED PEPPER FLAKES together in bowl & MIX with chicken
BROWN in ghee then REMOVE
ADD onions then saute THEN add tomato paste & stir until CARMELIZED
ADD garlic & ginger, STIR for 1 minute
ADD tomatoes & STIR until pan looks clean
ADD chicken, coconut milk, & flakes
SIMMER while making RICE or CHAPATI
ONION SUKHA MOONG DAL
VEG
Ingredients
1 cup mung beans, boiled but still grainy
1 large onion, sliced
4 green chilies
3 cloves garlic, minced
1 in. ginger, minced
ghee
Spices
1 Tb red chili powder
1 tsp Garam Masala
¼ tsp cumin seeds
Pinch turmeric
Salt to taste
Directions
ADD cumin seeds to ghee, let SPLUTTER, ADD garlic & ginger, STIR for 1 minute
ADD chilies, onion, salt saute until SLIGHTLY TRANSPARENT
ADD turmeric, SAUTE 1 minute
ADD dal, chili powder, garam masala, COOK 1-2 minutes
Serve with CHAPATI
PAD THAI
NON-VEG
Ingredients
1 lb firm tofu, diced large
1 pack Pad Thai noodles
1 pack mung bean sprouts
1 small head nappa cabbage, shredded
2 eggs
1/3 cup honey
¼ cup fish sauce
¼ cup scallions, diced
2 Tb rice vinegar
1 Tb tamarind concentrate
1 clove garlic, minced
Red pepper flakes, to taste
Roasted peanuts, to taste
Peanut oil
Directions
BOIL noodles until TENDER. DRAIN, MIX with some peanut oil to keep from sticking, SET ASIDE.
MIX tamarind paste, fish sauce, honey, & vinegar in small sauce pan, SET ASIDE.
ADD scallions & garlic to oil in wok, STIR for 1 minute, ADD eggs, scramble when they begin to set.
ADD cabbage & sprouts, cook until cabbage begins to WILT.
ADD tofu, HEAT sauce in small pan, when tofu begins to brown, ADD noodles, sauce, peanuts, & flakes, MIX until warmed and remaining liquid has been ABSORBED
AFRICAN PEANUT SOUP
VEG
Ingredients
3-4 large sweet potatoes, diced small
1 medium onion, diced
2-6 cups vegetable broth
1 bunch collard greens, pureed
1 can tomato paste
4 cloves garlic, minced
1 in. ginger, minced
Good amount chunky peanut butter
Vegetable oil
Spices
1 tsp ground cumin
Red pepper flakes, to taste
Directions
ADD garlic & ginger to oil, STIR 1 minute
ADD onion & potato, SAUTE until onion is soft & sweet & potato is darker & slightly translucent
ADD cumin, flakes, peanut butter, tomato paste, & vegetable broth, then STIR to DISSOVLVE
BOIL & ADD collard greens
SIMMER 15 minutes, periodically SMASHING potatoes until soup is VERY THICK

Ingredients
4 cups water
1 lb tubular rice cakes
7 dried anchovies, cleaned
1 pack fish balls
4 green onions, cut crosswise into fourths
1/3 cup hot pepper paste
Large square of kelp
Spices
1 Tb sugar
Red pepper flakes, to taste
Directions
BOIL water, kelp, & anchovies together for 15 minutes, then REMOVE
ADD rice cakes, paste, sugar, & flakes. STIR to mix.
ADD fish balls & onions, STIR until sauce is SHINY & THICK
CHAI

Indgredients
4 cups water
2 cups whole milk
7 whole green cardamom pods
1 stick cinnamon
2 whole cloves
1 in. ginger, cut in four and crushed
2 teabags
10 tsp sugar
Directions
ADD all ingredients EXCEPT milk and let BOIL
ADD milk once tea has been boiled long enough, bring to almost boil.
STRAIN all solids out
GOAT BRAIN

¾ tsp red chili powder

WASH brain, MIX with turmeric, chili powder, fennel, & salt
ADD onion to ghee, SAUTE till tender
ADD ginger, garlic, chilies, & garam masala, STIR for few minutes
ADD brain, STIR until well-cooked

2 lbs green beans, cut
2 cans coconut milk
5 dried red chilies, crumbled
Handful cashew nuts, crushed or ground
ghee
Spices
2 tsp coriander powder
2 tsp sesame seeds
1 tsp green cardamom powder

Directions
BOIL beans in water until partially cooked, drain.
DRY ROAST spices, nuts, & chilies
ADD ghee & beans to pan, STIR for few minutes
ADD coconut milk, SIMMER until THICKENED while making RICE or CHAPATI
CRISPY OKRA

Ingredients
1 lb Okra, cut lengthwise into quarters
2 green chilies, chopped
2 dried red chilies, crumbled
oil
ghee
Spices
1 tsp chaat masala
1 tsp cumin seeds
1 tsp asofoetida
Salt, to taste
Directions
DEEP FRY okra in oil until crisp and golden, DRAIN on paper towel.
ADD ghee to separate pan, ADD chilies & cumin, STIR for 1 minute.
ADD spices & okra, MIX until thoroughly coated.
BANDHAKOPI'R GHANTO
VEG
NO ONIONS OR GARLIC
Ingredients
2 lbs cabbage, grated
2 potatoes, diced
¼ c peas
2 green chilies, diced
1 can diced tomatoes
2 Tb roasted almonds, crushed or ground
1 Tb Raisins, soaked at least 15 minutes
ghee
Spices
3 bay leaves
1 ½ tsp cumin powder
1 tsp coriander powder
1 tsp sugar
½ tsp cumin seed
½ tsp turmeric powder
½ tsp red chili powder
½ tsp garam masala
Salt, to taste
Directions
ADD potato & peas to pan with ghee, let cook, then REMOVE and set aside
ADD cumin seed, bay leaves, & green chili, along with a little more ghee if needed, STIR for 1 minute.
ADD cabbage, salt, & turmeric, MIX
COVER with lid on MEDIUM HEAT for 5-7 minutes.
ADD cumin, coriander, & red chili powder, STIR, COVER & cook for 10 minutes.
ADD potato, peas, almonds, raisins, sugar, garam masala, & a little more ghee, MIX
COVER and cook on LOW HEAT until everything is cooked well.
SERVE with RICE or CHAPATI
BANDGOBI-MATAR

Ingredients
1 medium cabbage, shredded
1 c peas
ghee
Spices
1 tsp red chili powder
½ tsp mustard seeds
½ tsp turmeric
Salt, to taste
Directions
ADD mustard seeds to ghee & let SPLUTTER
ADD rest of ingredients, MIX
COOK on MEDIUM HEAT until cabbage is tender
LAMB NAAN

Ingredients
3 lbs ground lamb
1 large white onion, diced
¾ c fresh parsley, chopped
10 or more pieces of naan
Olive oil
Spices
1 Tb coriander powder
2 tsp salt
1 ½ tsp black pepper
¾ tsp ground cumin
½ tsp ground cinnamon
Directions
ADD lamb, onion, spices, & parsley to oil, COOK until done, DRAIN most juices
STUFF mixture into NAAN, try to get a fair amount into each
GRILL naan on griddle for few minutes per side, enough to give a bit of a crust, but not too much.

Ingredients
1 lb carioca/pinto beans
2 lbs pork belly, diced smallish
¾ c manioc flour
1 bunch collard greens, pureed
1 large white onion, diced
6 cloves garlic, minced
5 eggs, whisked
Olive oil
Spices
2 bay leaves
Salt, to taste
Pepper, to taste
Directions
ADD beans, bay leaves, & water to pot, BOIL until done, DRAIN & SET ASIDE
ADD eggs to separate pan in oil, COOK until done, REMOVE & set aside
ADD HALF garlic, COOK 1 minute, ADD collard greens, salt, & pepper, COOK for a few minutes, REMOVE & set aside
ADD pork to oil, COOK until done, ADD onions & remaining garlic, COOK until translucent.
ADD beans, STIR, for a few minutes, ADD eggs & collard greens, MIX.
ADD manioc flour, & more salt & pepper, SERVE.
PEPPER CHICKEN
NON-VEG
Ingredients
3 lbs chicken, diced
1 large onion, diced
2 green chilies, minced
3 cloves garlic, minced
1 in. ginger, minced
1 can diced tomatoes
1 can coconut milk
Coconut oil
Spices
3 Tb black pepper
2 Tb coriander powder
1 ½ Tb garam masala
1 Tb turmeric
1 tsp salt

ADD pepper to oil, ROAST on LOW FLAME for about a minute.
ADD onion, chilies, ginger, & garlic, COOK on MEDIUM FLAME until onions begin to brown.
ADD turmeric, MIX for 1 minute, ADD coriander, tomatoes, salt, & garam masala, MIX
ADD chicken, SIMMER for at least 15 minutes.
ADD coconut milk, MIX & SIMMER while RICE or CHAPATI is being made.
MUNGGO GUISADO

Ingredients
1 lb pork belly, sliced thinly
2 c water
1 c mung beans, boiled until soft
1 large white onion, diced
1 can diced tomatoes
1 bunch spinach, pureed
2 cloves garlic, minced
1 Tb fish sauce
Oil
Salt, to taste
Directions
ADD pork to oil until BROWNED
ADD garlic, onion, & tomatoes, MIX until onion becomes slightly translucent
ADD beans, fish sauce, salt, water, & spinach.
SIMMER until THICK.
PALAK PANEER
VEG
Ingredients
2 lbs paneer, cubed large
2 bunches spinach, pureed
3 green chilies, minced
1 large onion
1 can diced tomatoes
2 cloves garlic
ghee
Spices
1 cinnamon stick
2 whole green cardamom pods
2 whole cloves
½ tsp coriander powder
½ tsp garam masala
¼ tsp cumin powder
1/8 tsp cumin seeds
Salt, to taste
Directions
ADD paneer to ghee, COOK for 2 minutes, REMOVE & set aside
ADD cinnamon, cardamom, cloves, & whole cumin, when they SPLUTTER, ADD onion & chilies & cook until TRANSPARENT
ADD garlic & MIX for 1 minute, ADD tomatoes, garam masala, coriander, ground cumin & salt, MIX.
ADD spinach, MIX until it begins to SIMMER
ADD paneer, SIMMER until VERY THICK
SERVE with CHAPATI
