Vanilla Whoopie Pies

Cake

Wet Ingredients

  1. ½ C Shortening
  2. 1 C Sugar
  3. 3 Eggs
  4. 2 tsp Vanilla
  5. ½ C Hot Water

Dry Ingredients

  1. 2 C Flour
  2. ½ tsp salt
  3. 1 tsp baking soda
  4. ½ tsp baking powder
  5. Icing Recipe
  6. 1 Tbsp Vanilla
  7. 1 C Shortening
  8. 4 C Powdered Sugar
  9. 1/4 C + 2 Tbsp milk

Cake

  1. Pre heat oven to 425°
  2. In a large bowl combine and mix all wet ingredients EXCEPT HOT WATER
  3. In medium size bowl combine dry ingredients
  4. Add ½ dry ingredients to wet ingredients and mix. Repeat with 2nd half of dry ingredients.
  5. Add Hot water and mix
  6. I used a 2” cookie scoop for the whoopie pies. Use a lightly greased or parchment covered cookie sheet.
  7. Bake for 6 to 8 minutes.

Icing

  1. Using a mixer combine shortening and powdered sugar
  2. Add powdered sugar 1 cup at a time, add milk and vanilla a little bit at a time after each cup of sugar
  3. On med/high speed mix icing until incorporated
  4. Scrape sides of bowl with spatula
  5. On high speed mix icing for another 2-3 minutes
  6. Fluff with spatula
