DEL RIO JACK

Going through some of my Granny's recipes, I found this old classic. A simple, meal-in-itself. 1 1/2 c. grated Monteray Jack 4 Tbsps. butter 2 c. milk 4 Tbsps. flour 1/2 tsp. salt 1/8 tsp. ground black pepper 1/2 tsp. red hot sauce (or more to taste) 1/2 c. tomato catsup 1 15-oz can of red kidney beans, drained 4 slices of hot, buttered toast.

 Make a roux of butter, milk, and flour. When thickened, stir in salt, pepper, and cheese. Stir until cheese is melted; then fold in catsup, hot sauce, and stir in beans. When heated through, spoon over toast.
