Great-Grandma's Stuffing

So good, we use this for Thanksgiving!

Ingredients:

  • 1 cup chopped onion
  • 1 ½ to 2 cup chopped celery
  • ½ stick butter
  • ½ loaf dry diced bread (Grandma would let the bread be out in bowl overnight so it would dry out. Do NOT use fresh bread.)
  • 4 eggs beaten
  • Fresh chopped parsley
  • ½ to 1 cup mashed potatoes (Substitute 1 pkg. instant potatoes reconstituted in lieu of mashed potatoes)
  • Salt and pepper
  • 1 can chicken broth

Directions:

  1. Preheat oven to 350º F.
  2. Sauté onion, celery, and butter until well cooked; add more butter to keep the ingredients coated.
  3. Place diced dry bread in bowl.
  4. Add sautéed onions and celery, 4 beaten eggs, parsley, mash, and salt and pepper.
  5. Slowly add chicken broth to bread mixture until it is moist [wet] (otherwise it will be dry out after baking).
  6. Bake in covered casserole 350 degrees 45 minutes.
  7. Remove cover and bake another 15 minutes until browned on top.
