Inspired by a Martha & Marley Spoon recipe!
Ingredients: <return> 1/2 lb Penne <return> 1 cup broccoli florets <return> 1/2 cup cherry tomatoes, sliced in half <return> 1/4 cup Panko breadcrumbs <return> 1/4 cup grated Parmesan <return> 3 garlic cloves, minced <return> 1/4 cup cream cheese <return> Olive oil <return> Salt and pepper <return>
Method: <return> Boil salted water and preheat broiler if necessary. Add penne to boiling water. Once there is 5 minutes left to al dente, add broccoli florets to same pot of boiling water.
Meanwhile, combine breadcrumbs and Parmesan and season with salt and pepper.
Once pasta is al dente, save 1/4 pasta water and then drain contents and leave in strainer.
Return pot to stove and add garlic, tomatoes, and olive oil over medium heat. Once fragrant, add cream cheese and stir to combine. Turn off heat and return pasta/broccoli to pot, stirring to combine and seasoning with salt and pepper.
Spread on greased or foiled cookie sheet and cover with breadcrumb/cheese mixture. Broil until topping is golden brown, watching closely, about 1 minute or so.
