Recently tried a coconut cream pie at a restaurant that was different than pretty well any other coconut cream pie I've ever had. I'm wondering if anyone has any recipes that are similar.
One major thing made this pie different: the coconut layer wasn't custardy or pudding-like as you find in most recipes. It was very thick and almost had a soft crumbly texture, as if it was baked prior to being topped with cream.
Another thing that was different was that it seemed to be made with a shortbread crust rather than a crumb. The top layer was the usual cream.
Any ideas?
