This is a recipe that I have been making and tinkering with for a few years now, it has simple ratios of ingredients that make it easy to adjust for different numbers of people.
Wanted to share to see what other people think and if you have any suggestions for how I can improve the recipe.
Ingredients
Dried Penne Pasta (75g per person)
Diced Chicken (100g per person)
Diced Thin Cut Bacon (4 Slices per person)
Sliced Mushrooms (50g per person)
Diced garlic (2 cloves)
Basil Pesto (1 190g jar for up to 6 people)
Creme fraiche or Soft Cheese (300ml or 180g for up to 6 people)
Splash of olive oil
Parmesan
Method
- Fry the garlic in a splash of olive oil for 1 minute then add the chicken and fry until no white is left
- Add the bacon and mushrooms together and fry
- Meanwhile cook pasta to instructions in salted water
- After the bacon and mushrooms are cooked drain off some of the fat so that there is a small amount left in the bottom
- Add the creme fraiche or soft cheese and stir into the chicken and bacon
- Add the pesto and stir in
- After the pasta is cooked save a small amount of the water, drain and stir into the rest with the saved water
- After stirring everything together heat for another 2 minutes while stirring to prevent sticking
- Serve with Parmesan grated over the top and enjoy
